| Casademont has been producing pork products for well over fifty years. The company has around 400 employees and two different production plants in Bonmatí and Palol de Revardit (Girona, Spain). The company produces dry cured hams and fermented sausages, cooked ham and other cooked products which are mainly sold sliced. Casademont is constantly carrying out internal and external research development projects related to new products and new technologies. These are applied to production processes to improve quality and safety of products. |

Esteban Espuña has been producing pork products for more than 50 years now. The company has roughly 450 employees and four different production plants: two plants in Olot (Spain), a slicing plant in Utrillas (Spain) and a multiproduct plant in Argentina. The company produces dry cured ham, fermented sausages, cooked ham and other cooked products which are mainly sold sliced and a range of meat based ready-to-heat products. Esteban Espuña was a pioneer in the use of high pressure to treat meat products. This technology was first used in the company in 1998 to treat sliced cooked ham at 400 MPa and since 2005 the company has a new unit of 600 MPa. | |

![]() | PigCHAMP Pro is a company that belongs to the Proinserga Group. It was founded in the year 2000 by the Research and Development Department of Proinserga, as a company devoted to research, development and information management. PigCHAMP works for Proinserga and other companies (laboratories, ministries, etc). PigCHAMP developed several applied research projects together with partners in the pork chain from breeding to slaughter. The projects dealt with animal production such as nutrition, genetic, carcass and meat quality, environment and waste management, information management and high quality biomarkers. PipCHAMP took part in the EU project “New markers of immunological stress and welfare in animals; porcine acute phase proteins in the production of healthy pigs” (QLK5-CT-2001-02219). |

PigCHAMP coordinates a Spanish pilot chain to validate the routine use of rapid methods for animal health, welfare and food safety. Furthermore the PigCHAMP supports the communication with the industry and SMEs for the set up of pilot and demonstration chains, as well as training and dissemination of results to SMEs in the Spanish pork sector.
